“Principles of Nutrition” is an introductory course in which students learn about the basic principles of nutrition and diet. Specific topics include the role of nutrition in disease, the nutrients and their use in the human body, and the application of nutrition principles to the needs of humans. The course is geared towards nonconcentrators and does not count toward a biology concentration. There is no official prerequisite for this course, and most students felt none was necessary.

Professor Flynn received very positive reviews from her students. Survey respondents praised her willingness to take their needs into account, and found her very approachable and friendly. They appreciated her willingness to answer questions, and the way she related her lectures to current events. Class members also loved her clear presentation of the material, although some complained that she tended to move through the material too quickly.

The assessments for this course consisted of three exams, which most students viewed as a very reasonable expectation. In general, students had mixed feelings about the textbook. Some thought it corresponded well with the lectures, but others thought it was redundant and unnecessary.

Most of the students said that they about one to two hours a week on the work for this class, which was very similar to the time commitment they expected. Reviewers did say that the workload did increase during exam weeks. Most people strongly recommended the course, which they thought had terrific practical applications. Respondents thought this course would be especially good for those with an interest in nutrition.
