Research Summary: "Lillian Tsay studies the history of food industry in modern Japan with a focus on sugar and sweets businesses. She is interested in the transition of how 'sweetness' was embodied with new cultural meanings since Japan’s Westernization movement in early 20th century and how the consumption culture in the empire’s metropole was connected with the sugar industry in Japan’s colonies."
